After using a vacuum machine, food will not be damaged for thousands of years? Can vacuum packaging really make food safe and sterile?

Taiwan has a damp climate. After drying the milk for a while, it may not be crispy and taste … and fruits have many health benefits and must be properly preserved, because improper storage of fruits may produce yellow toxins. I thought that eating fruits is beneficial, but after eating them, I will not lose them! Recently, food vacuums are often seen on the market to preserve food and avoid deterioration. Can food be preserved for thousands of years? Let’s see what the Food and Drug Administration says?

The workshop said that as long as you use the food vacuum machine, food will be safe for thousands of years?

The principle of vacuum packaging is to prevent food from changing quality by removing air (especially oxygen). This is because food changes, mold and decay, which are mainly caused by microorganisms. Most microorganisms, including bacteria and yeast survival requirements, require oxygen, so the air in the packaging is drawn away, and some microorganisms lose the environment suitable for survival. The growth and reproduction rate will drop sharply, and even stop reproduction. This can delay food oxidation and prolong the storage time of the food in the packaging!

Although it is said that withdrawing air can reduce the growth and reproduction of certain microorganisms, not every microorganism needs an aerobic environment to survive. Some microorganisms grow more active in an oxygen-free or partially oxygen-free environment, such as Clostridium botulinum, Clostridium perfringens, Escherichia coli, etc., such as Clostridium botulinum and facultative oxygen bacteria.

Commonly known as Botox food poisoning, Botox can produce spores in an aerobic environment and become dormant, but it reproduces and grows in an environment without aerobic and low acidity (pH> 4.5), thereby producing fatal toxins.

In summary, under specific environmental conditions, vacuum machines actually help food preservation, but vacuum packaging will actually promote the reproduction of oxygen bacteria, so only one method may not be effective. It is still necessary to combine other auxiliary methods, such as refrigeration, water refrigeration, high temperature killing or salt sugar marination to reduce the water activity of the product to inhibit and eliminate bacterial growth.

So can food vacuum machines really be able to do it? The Food and Drug Administration’s tips on reminding you that before using a vacuum machine to help preserve food, you must remember that the effect is limited! It is recommended to eat as soon as possible when the food is fresh, or to combine other methods to help reduce the growth of microbial organisms, so as to ensure food safety and avoid food poisoning! In addition, fresh foods must be fully heated before eating, so as to ensure safe consumption.
